Fun fact: I began really getting into cooking a few months after Josh and I started dating. I was just entering into my second year of college so it was becoming more convenient for me to cook. Shepherd’s pie was one of the first things I made!
For the longest time, this has been a household staple and one of our favorite dishes! Any time we want something savory and cozy, we head to this recipe. Any time we have guests or need to feed multiple people, we go to this recipe.
We’re not big on “heavy” dishes where you feel weighted down after eating. Thus, I’ve taken some steps to lighten up this classic. If you want a vegetarian version, replace the turkey with 2 c. chopped mushrooms.
For the top potato layer, I love to make the potatoes as smooth as possible. Thus, I blend mine in a food processor, but there’s nothing wrong with going the more traditional route of mashing by hand!
Tip: Seal the dish with the potato layer. I usually bring the potatoes slightly up the sides. This will minimize how much of the liquid boils up and spills over the top. Definitely, definitely, definitely do not skip the step of letting the pie sit before cutting into it!
