You guys, I just had one hell of a week. I’m sorry if I’ve been MIA everywhere! I just got back from urgent care a couple hours ago. On Tuesday, I ate something with monk fruit in it, which is a derivative of kiwi. I’m highly allergic to kiwi (hence, why you’ll probably never see it in my recipes!). I completely broke out in hives from my scalp to the bottom of my feet. Total. Misery. So, my doctor prescribed me some stronger antihistamines than Benadryl and, thankfully, they’re working!
In the mean time, I want to share this recipe with you all! I meant to post it a couple days ago, but, you know, hives. I’ve always been hesistant about making smoothie bowls because each one I see on Instagram and elsewhere looks like a literal dream! However, it’s much easier than it looks!
INGREDIENTS:
- 1 banana
- 1/2 avocado
- 1/2 c. mango
- 1/2 c. pineapple
- 2 large handfuls of fresh spinach
- 1/4 c. almond or coconut milk
- 1 tbsp. matcha
- garnish: 1/2 banana (sliced), 1/2 c. sliced strawberries, 1/4 c. fresh blueberries, 1 tbsp muesli, 1 tbsp. granola
DIRECTIONS:
Begin by blending banana, matcha, spinach, and almond/coconut milk until spinach is completely blended. Add avocado, mango, and pineapple. Blend until smooth. Pour into large bowl and garnish with fruit toppings.
Ridiculously easy! I’ll be coming to you all later with more recipes that aren’t smoothies, but for now, I really wanted to share this one with you all!
